Pine nuts, aka pignolia or pignon, is one of the most expensive and nutritonal tree nuts in the grocery store.
They are rich in polyunsaturated fatty acids, minerals, and fat-soluble vitamins.
Pine nuts grow in remote mountainous areas, making transportation difficult due to rugged and dangerous terrain. To harvest more pine cones, farmers camp nearby.
Picking workers risk their lives climbing over ten meters high to lay down the pine towers. Some skilled workers use hydrogen balloons to float into the air and hit pine towers, but it is one of the most dangerous jobs in the world.
The pine towers are then piled up in an open area on the mountainside to dry completely before being cracked open to extract the pine nuts inside.
Now you can understand why they are so expensive.
